NOVA VENEZIA® is an artisanal pastry laboratory in Doha (Qatar). Our mission is to bring an authentic taste of Italian pastry tradition, with all the luxury and the elegance of the old Most Serene Republic of Venice, reinterpreted in a modern key. Discover the elder TRADITION of the real Italian Gelato, the MISTERY of the flavour of our Chocolate, the luxury of our Pastries and Cakes: a place where traditions come together with the opulence and the ELEGANCE of the venetian court.
GELATO & SORBETTO
The authentic Italian Gelato is made with milk rather than cream, so it’s much lighter and significantly lower in fats (6% – 8%) compared to other ice-creams (18% – 24%). The secret of its creamy texture is a process called “mantecazione”, where it is frozen and churned very slowly so it doesn’t absorb too much air. Our Sorbetto is made with water instead milk and have 0% fats.

NOVA VENEZIA® made a great selection of the best italian raw materials because we want to offer our costumers an impressive experience: every raw material we use bring to our Gelato and Sorbetto its story, tradition and its unicity. Every ingredient used here in NOVA VENEZIA® is fresh and natural, and this is why our Gelato and Sorbetto are so much better than any other: we make it right here, everyday. We also avoid emulsifiers and non-natural thickeners and we’ll never use them. As a result our Gelato and Sorbetto are full in flavor, with a creamy texture but light in fat, healthy and wholesome and, just like Venice is unique all around the world, you’ll never find a Gelato with the same taste here in Qatar.

Chocolates are very similar to venetian masks: you never know what is behind the chocolate… you have to taste it and, after the sweetness of the chocolate, you can unveil the true, creamy heart of the stuffing.

Cakes in NOVA VENEZIA® are the maximum expression of the skills of our Pastry Chefs. We firmly believe that a cake should not only be good, but it should fill of pleasure your eyes and your mind even before your palate. It should make you savor the moment when you’ll bite it, and imagine the feeling of its sweet stuffing melting in your mouth.

We have changed so much and in so little time our way of life that we tend to consider as luxurious as sweets and simple things. Here in NOVA VENEZIA® innovation and evolution are very important, but the key of our work is to don’t forget our culinary roots. For this reason we choosed to propose a selection of the very best italian regional pastry recipes, using the same products that filled the pantries of our grandmothers, as olive oil, almonds, walnuts, honey… to share with you the luxury of the simple and classic.
